My sister’s family and mine have a standing date once a month. It is the only way that we can be guaranteed to get together at least that often. We live very busy lives, but we didn’t want our children missing out on growing up together. Especially seeings that we live in different towns. That is one of each of our best memories, growing up with our cousins. So, in order to keep things as traditional as possible, every month we would swap back and forth to houses, eat dinner together, spend time playing, and we would keep each other up-to-date on what was happening with our lives.
The men would usually retreat to the basement to talk guy talk, which was okay with us because we didn’t have to be interrupted! One night, my sister said she was making chicken parm. I was expecting the traditional chicken breast slathered in pasta sauce. Instead, we were treated with this crispy chicken that was so tender and delicious.
I asked her about frying it because that isn’t her usual health-conscious style. She said she baked it! I was like Whoa! Now this is the only way I do my crispy chicken too. It’s just like this recipe from Spend with Pennies. So easy and so tasty!
