I first discovered this casserole when I was on vacation in Florida. Glad I brought the recipe back with me!
I am a lover of casseroles. They are easy to make and they always taste great. Most of the time, when I make a casserole, it either contains beef or chicken, or no meat at all. Rarely, have I ever considered the possibility of including seafood in my oven bakery. This past week as I was creating my meal plan I came across a lovely casserole dubbed “creamy seafood casserole” over at Food.com. It is delicious.
Now, my youngest son has a shellfish allergy so I made him a small little crock of this casserole using only chicken instead of the shrimp and fish. He can have fish but I don’t think the two would have tasted so great baked into a casserole together.
