Mom always made the best potato soup. It was my favorite food whenever I was sick, sad, or just not feeling myself. If I was locked in my bedroom, she knew I needed a pick-me-up and would toss this recipe that I found on Group Recipes together. As soon as I could smell it coming through the open areas around my door, I instantly felt better. Now that I have kids of my own, I can do the same for them following these directions.
Its a very affordable meal and you can serve a bunch of people. My husband’s family often does a potluck soup holiday and this is the soup I take. They are farmers and love their meat and potatoes so the pan is always scrapped clean.
(I always make sure to throw a pound of bacon or more in mine!) Makes cleanup easy. When I make it for my family at home and there are leftovers, I have them for breakfast! It really is good anytime of the day any season of the year.
