My two boys are crazy about cowboys and anything related to them, so I knew they’d be excited. My oldest son said this is what he’s going to make every day when he grows up and lives on a ranch, haha!
To my surprise, I’ve been able to sneak in some extra vegetables without them even noticing it, and I swear the more often I make this, the better it seems to taste every time! You could use turkey instead of beef, if you’d like to make this leaner. And you can use any kind of beans you want!
Ingredients
1.5 pounds ground beef
2 pounds potatoes, cubed
1 envelope Onion Soup Mix
14.5 oz can diced tomatoes, undrained
11 oz. can of sweet corn, drained
15 oz. can beans, undrained
1/4 cup water
1 cup shredded cheddar cheese
Instructions:
On the stove in a skillet brown and drain ground beef.
Spray the inside of a slow cooker with cooking spray. Add potatoes and sprinkle onion soup mix over the top. Layer ground beef on top.
Add can of diced tomatoes, corn, and beans. Add water and close lid.
Cook on low for about 6-7 hours until potatoes are tender.
Stir ingredients, and then add shredded cheese over the top. Close lid for 10 minutes to melt.
