My siblings and I were homeschooled K-12th grade. Actually, my mom still has two homeschoolers left. I graduated in 2012, my sisters in 2013 and 2014 respectively, and my younger brother and sister are in 7th and 9th grade. We were all homeschooled by my mom which was an awesome experience. However, throughout all of that, she did not always have time to cook a hearty lunch because she was teaching us.
Many times, we had mac and cheese for lunch, but I will be honest, I did not care one bit. I love mac and cheese! I mean, I practically grew up on that stuff.
The cool thing my mom did was that she often switched it up. Now don’t feel too bad for us! Sure we had mac and cheese most school days, but she made us awesome dinners in the evening when my dad got home from work.
What she would do is save the leftover meat from the dinner the previous night and use it in a variation for the next day’s lunch. It was usually grilled chicken or a side of ground beef, but one day she made this amazing creation and I was hooked. It is definitely my favorite!
