This pound cake is super moist and flavorful. I love how fluffy it is. Another thing about this recipe is how easy it is to follow. Now, there are some very specific instructions for which flavorings to use and I don’t want this stressing anyone out. If you can’t find these specific flavoring that is fine just use what you have on hand. I was able to get the flavorings and they are very good indeed but other brands will work as well, too.
Check out what my pals over at A Simple Home Cook had to say about this recipe:
Mom acquired the recipe from a friend in the early 1970’s, along with her first bottle of Superior Vanilla Butter and Nut flavoring. By the time I was in college, the flavoring was harder to find. In fact, I remember dragging a college room mate from store-to-store looking forward to it…she also remembers. Today, it is extremely difficult to find. I ended up ordering it online from Betty’s Country Grocery in North Carolina…the flavoring is made in North Carolina.
Until I made this cake I had never had that brand of flavoring. It is definitely worth finding 🙂
Ingredients
1 c. Kerrygold butter
1/2 c. solid shortening (Crisco, etc.)
1/4 tsp. Morton salt
3 c. Domino sugar, granulated
5 large eggs
3 c. Gold Medal flour, sifted
5 oz. evaporated milk + 3 oz. water (1 c. total)
1 1/2 Tbsp. vanilla butter and nut flavoring
Instructions:
Cream butter, shortening, salt and sugar.
Add eggs, one at a time.
Add flour and milk alternately.
Fold in flavoring (be sure to do this by hand).
Pour into a greased and floured Bundt or tube pan (10 to 12 cups).
Place in cold oven and set oven temperature for 325.
Bake for about 1 hour and 20-25 minutes if using a darker pan or 1 hour and 30-35 minutes for a lighter pan.
DO NOT OPEN OVEN DOOR WHILE BAKING.
Check to see if done by inserting a toothpick or tested in the center of the ring.
Only allow the pan to cool for a few minutes before removing it from pan.
Allow to cool completely before serving.
