Chunky Chicken And Almond Casserole That’ll Make You Say, “Yeehaw!”

What comes to mind when you hear the words, “homecooked?” I think of foods made with wholesome ingredients by the hands of my grandma or mother in their own country kitchens.

These women would quite often make massive meals for my family on Sunday afternoons. One of the things my grandmother taught my mom to make was chicken and rice casserole. We absolutely loved chowing down on this delightful dish. The texture was thick, creamy, and satisfying. The leftovers, assuming there were any, always hit the spot the next day.

I was browsing some recipes on yesterday and I came across this chicken and rice casserole on Facebook. I felt feelings of nostalgia immediately upon seeing the photo of this tasty casserole. Did you know this recipe differs ever so slightly from my grandma’s?
