Whenever my mom headed to the kitchen, we knew we were going to eat well. She was, and still is, the best cook on Earth! (at least in my opinion.) Some of her many masterpieces are casseroles. A lot of people hear the term casserole and instantly turn up their nose, my husband being one of those people. I, however, hear that term and think of the yummy dishes that my mom used to make.
When I found this recipe for chicken and potato casserole on Recipe Lion, it reminded me of a dish that she used to put together for us back when I lived at home. When I mentioned it to my hubby, he said no way. It took some convincing, and bribing with extra bacon, but eventually he agreed to try it.
So, I picked up all the ingredients at the shopping center and made it the following week. As he carefully tasted the smallest of nibbles, his eyes got big. I thought he was going to tell me he didn’t like it…but he actually loved it! Whew! My kids really enjoyed this too so I now I have an easy casserole to put together on busy weekdays. Finally!
