Whenever my mom and dad are coming over for dinner, this is one of the dishes that I make. They like their meat and potatoes just as much now as they did back when they were growing up. It’s just a traditional dinner that’s gives you that warm and fuzzy feeling all over when it’s on the table. My kids even eat this without every whining or crying about it…which is a feat in itself these days! Check out what they are saying about this recipe over at All Recipes:
“One pot, add a salad, and you’re done.”
When you’re busy, this is the dinner solution that you’re looking for. Your family will love you for it.
Ingredients
1/4 cup Land O’ Lakes butter
4 bone-in chicken breast halves
5 potatoes, peeled and cut in half
4 large carrots, peeled and cut into large chunks
1/2 teaspoon paprika
1/4 teaspoon McCormick’s garlic powder
salt and pepper to taste
Instructions
Melt the butter in a large skillet with a lid over medium heat, and sear the chicken breasts, skin side down, for 5 minutes, until the chicken starts to brown.
Turn the chicken breasts over, add the potatoes and carrots, and sprinkle with paprika, garlic powder, salt, and pepper.
Cover and cook over medium heat for 35 to 45 minutes, stirring occasionally, until the potatoes are tender, the chicken is no longer pink inside, and the chicken and vegetables have brown, crisp spots on the bottom.
