The leaves were starting to change back to green, the weather was getting warmer, the days were getting longer, and we were getting busier. It happens every year. I look so forward to the season changing back to warm summer months, and then we are so busy I can barely enjoy it. The last thing I have time for is spending hours in the kitchen. I don’t mind hanging out in there in the winter…there’s nothing else to do. In the spring and hot summer though, I want to make my meals and get the heck out of there.
That’s when I remembered a recipe that my mom used to make us in the spring, summer, and even fall….chicken and potatoes…stove top style. I found a similar recipe on All Recipes and made it that very night.
It’s so easy and the ingredients are few so I had everything already on hand. My family each gobbled their portions right down and we got to go outside for a nice bike ride that night. I’ll be using this a lot more in the future!
