The other day I was flipping through one of the old recipe books my mother had given me and I came across her stuffed pepper recipe. My mom handwrote all the recipes in this book, mind you. I decided that I was going to make this heirloom cuisine for my family. However, I wanted to add a bit of a twist to the mix. So, what did I do? I added cheese! These are some of the best-stuffed peppers that I’ve ever eaten in my life.

When I told my kids we were having stuffed peppers for supper they looked a bit downtrodden but when I revealed to them that the peppers were made with cheese I instantly got smiles of approval.
