Back when my husband and I first moved in together, we would live off of foods that came out of a box. We were both very busy with finishing up school and working that we rarely had time to make something homemade. Velveeta Skillet meals were always one of our favorites. They were so tasty, and there was just enough in that box to feed the both of us. This kind of cooking went on for years, until our toddler was old enough to share meals with us.
The box was no longer enough to feed us all. I had to do something to spread it out. Thankfully, I found this recipe for a fiesta skillet meal on Spend With Pennies. It was still super easy to make, but it turned that two person meal into at least a four person dish.
We can now still eat that boxed stuff that we like so much, but we don’t have to worry about running out. There are also tons of vegetables and other treats loaded in there that are both tasty and good for us, and our little one.
