I could never get my three-year-old son to eat anything for breakfast other than cereal. No matter what I tried, he wasn’t interested. I don’t know how many times I tried to get him to eat scrambled eggs.
What kid doesn’t like scrambled eggs? I even tried drizzling ketchup over the top, which for some ungodly reason kids love. He still wasn’t having it. Then, one day, my Aunt came over to spend the day with him while I had to go to work.
When I got home she said that they had scrambled eggs for breakfast and she had to make more because he ate the first pan’s worth. I asked her how on earth she got him to do that…”Oh honey, lots of cheese and lots of butter.”
Of course, why didn’t I think of that. Now that I have this recipe, similar to the one on The Pioneer Woman, me and my son can finally enjoy something for breakfast besides cereal. Hooray! They pair nicely with french toast, pancakes, or a side of bacon.
