The other day, my neighbor Anne called me over in a panic.
I ran over thinking what could have possibly happen only to find her in the kitchen with her world famous (or well, neighborhood famous) shredded chicken enchilada dish all over the floor. Turns out she was ready to place it in the oven when her big dog, a lab named Brandy, ran into her and made it fall right out of her hands.
Anne was in tears, still with the mess on the floor, letting Brandy enjoy her wonderfully delicious creation. I shooed Brandy out and asked her what happened. When she told me, I told her it was okay, that we would figure out something else to serve for dinner.
But she said no, it had to be enchiladas because that is what she had promised a Mexican missionary who was coming to have dinner. So I ran to Publix, picked up the ingredients she needed and set out to make another one for her while she cleaned up the kitchen and got ready.
We had that enchilada ready to go and in the oven by the time the missionary and his family showed up. We were so excited at how it turned out that she snuck a piece over to me.
