When you have prepared a delicious meat dish to feast on, you want a side that is really going to compliment it. You can’t go wrong with this elegant potato casserole. It’s fancy enough to hit all the right taste buds without a load of extra ingredients.
This casserole is very versatile, and depending on the time of the day, you could really hearty it up into an entree. Turn it into a breakfast dish by switching out the sliced potatoes for hash browns and adding eggs. Serve it as a meal for dinner by adding in a pound or two of ground beef or even chicken breast.
Ingredients
Cook the potatoes in enough water to cover in a saucepan just until tender; drain.
Let stand until cool.
Slice the potatoes.
Sauté the green onions in the butter in a skillet just until tender-crisp.
Layer the potatoes, sour cream, green onions, bacon, cheddar cheese, salt and pepper 1/2 at a time in a 3-quart baking dish sprayed with nonstick cooking spray.
Bake at 350 for 20 minutes.
