Whether it’s winter time and I have prepared a nice roast or pork tenderloin, or if it’s the summer and the grill was fired up for some big juicy steaks.
This potato casserole is always the perfect complement to fill up my guests. There is enough elegance to it to serve at a dinner party, but it isn’t too fancy to scare of my little picky eaters. I have always struggled with making scalloped potatoes just right.
They either turn out super dry or more like a scalloped potato soup. This recipe doesn’t allow for that mistake to happen. You get a perfect casserole every time.
Sometimes I like to switch out the ingredients and make different flavors like a ham and Swiss cheese instead of the bacon and cheddar here. Whatever meats and cheeses I use, it always turns out excellent! Leftovers are hard to come by the next day, let’s just say that.

Quick Tip: Use pepper jack cheese instead of cheddar for a little extra kick.
