I love soups. My goodness, I love a big ol’ bowl after a long day of work. I especially love it when it is a creamy soup with chunks of potato and some bacon (well, maybe a lot of bacon!) and then topped off with a big dollop of sour cream and a sprinkle of cheddar cheese… Oops – I think I just described a bacon and potato cheddar cheese soup! But really, who can pass up a bowl of that deliciousness?
It is just comfort and warmth in a bowl. I remember the very first time I had this soup. I was at Applebee’s with my grandma after a long day of shopping and we had come in “just for dessert.”
Well, after seeing the menu, we decided a little soup to share wouldn’t hurt. We asked what the soup of the day was, and when they told us “bacon and potato cheddar cheese soup” we knew we each wanted our own. We enjoyed it ‘til the very last drop.
So good, so filling and so warm and comforting! Since then, I get a variation of that at Panera Bread, but it is just not the same.
