Busy Farmer’s Meatball And Hashbrown Casserole

My husband works hard. I mean, really hard. He has a full time job at a local factory where he works 8 to 10 hours a day. That’s our security blanket to pay the bills. Then, he comes home and goes and helps the neighbors farm their fields when it’s the time. Granted, he doesn’t have to do that every day, when he does, it results in 16 to 20 hour days. I’m not sure how he does it, but he does.

On those days that he doesn’t have time to come home and eat, I like to take him something for dinner. There aren’t many things that transport well out to a tractor, especially homemade items. This recipe from Julie’s Eats & Treats is one that actually does carry well, and it offers a home cooked meal when he can’t be home.

I like to make a big ol’ pan of this and take it out to him and let him share it with whoever else wants some. He always brings me home an empty dish, so I guess that means they like it! I like it because it’s so quick and easy to make!
