Back when I was younger, I would spend a lot of time with my mom in the kitchen. She knew what she was doing in there. It didn’t matter where else I ate, or what restaurant served me, there was nothing like my mom’s cooking. I remember whenever she would make nachos or tater tots covered in cheese, or anything else that had melted cheese on it, she would always tell me how good the burnt stuff on the pan was. I always looked at her like she was crazy. There was never any fight over that. “You go ahead Mom, eat the burnt stuff.”
When I was older, I was finally brave enough to figure out what she was talking about…still thinking she was a bit nuts. When I finally bit into one of those little crunchy bits…it was like a little taste of heaven. That’s why, when I found this recipe on Spend with Pennies, I couldn’t wait to share it with my mom.
It was like a whole pan of just that crusty crunchy cheese, all to ourselves. And don’t worry, we ate the whole thing too!
