Boomin’ Brown Sugar Meat Loaf

Meatloaf is a great meal to have on any night of the week and it pairs well with a variety of sides. Your family is going to really like this recipe…even those picky eaters! We rarely have leftovers of this meatloaf! You can’t have a good meatloaf without onions. Period. my daughter usually complains about the texture of the meatloaf but for this recipe, she did not. Win for team mom!

I really liked the sweet taste of the sauce on this meatloaf. It was different but in a good way.

 

Ingredients

1/2 c packed Domino brown sugar

1/2 c Heinz ketchup
1 1/2 lb lean ground beef
3/4 c TruMoo milk
2 Eggland’s Best eggs
1 1/2 tsp Morton salt
1/4 tsp ground McCormick black pepper
1 small onion, chopped (can use dry minced)
1/4 tsp ground ginger (i use a little more)

3/4 c finely crushed cracker crumbs (i use club)

Instructions

Preheat oven to 350 degrees.

Lightly grease 5 x 9 inch loaf pan.

Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.

In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.

Place the loaf on top of the ketchup.

Bake in preheated oven for 1 hour or until the juices are clear.
