Pregnancy with my oldest child was an interesting ride. I was young, it was new, and I wasn’t quite sure what I was supposed to be doing to keep my baby healthy. All that I knew, was that I wanted to eat…a lot. My doctor kept telling me that I was gaining a little too much weight, but that little boy was hungry. Of course he didn’t want healthy foods like fruits and vegetables. He wanted deep fried fast foods, and pastries…mainly….pancakes.
I ate pancakes everyday for breakfasts, and sometimes again for lunch or dinner. That’s how much I craved pancakes. After that little guy was born, I never wanted to look at another pancake again.
I had enough to last a lifetime! That was, until he was old enough to eat pancakes on his own. I found this recipe on All Recipes and it actually looked good to me, which was pretty strange.
We both just gobbled them right up. It took a few years and the right recipe, but I think I can finally eat pancakes again!
