When my little brother and his wife were having their first baby, they wanted to do a shower, but they didn’t want anyone to go too crazy over it spending tons of money. They just wanted a small celebration to recognize that they were going to be bringing a new life into the world. My sister-in-law’s mom thought that it might be a good idea to do a potluck, that way nobody got stuck with the big food bill. I thought that was a fine plan as did the rest of us that were going to be attending.
I know that my sister-in-law had been craving Mexican-inspired cuisine throughout her pregnancy, so I wanted to make something that she would really enjoy. That’s when I came across this recipe for burrito casserole on Group Recipes.
It looked absolutely perfect. It went together really fast and it was super easy to take along. It was a huge hit at the shower too. Everyone that got a slice complimented me on the flavor. This is one that I will be making again and again!
