Beer Can Chicken – The BEST Of Both Worlds!

I love chicken and I love beer so you can imagine my delight when I came across this superstar of a recipe! It is absolutely amazing! The flavor of this chicken in undeniably delicious. I can’t even begin to tell you all how good this chicken turned out. Wow! The Frugal Cook, you really outdid yourself with this one! We are so grateful to have come across this wonderful recipe on YouTube!

There are many things you can pair this recipe with such as mashed potatoes, rice pilaf, or a side salad.

 

Ingredients

1 whole chicken
1 can of beer of choice
1 tsp Morton salt/lb of chicken
1 tsp pepper/lb of chicken (optional)
1/2 cup Kerrygold melted butter

Tools:
Baking dish or pan
Clean plastic bag big enough to close around chicken in baking dish/ pan
Brush or spoon for brushing/ rubbing melted butter on chicken in grill

Instructions

With your chicken in a baking dish/pan (in my case a medium three pounder) use a paper towel or cloth to pat dry making sure to get in all the nooks and crannies. The dryer the better!

Measure out a tsp of salt per pound of chicken. iYou may add pepper if you like. At this point you are welcome to also throw in any other dry spices you are a fan of. Rub well and thoroughly, making sure to get in the wings and all the other “in between” parts. Flip the chicken and do the same on the other side. Dont forget to sprinkle some in the cavity!

Loosely cover the prepared chicken with a plastic bag and put in the fridge overnight. Do your best to make sure the bag does not touch the chicken.

**NEXT MORNING**

Pull the chicken out of the fridge and notice that it doesn’t have anymore salt on it. the salt has been absorbed into the chicken and the flavor now permeates the whole thing. Yum!

Once again gently pat dry it to remove any excess liquid. Dont forget to pour out ALL the liquid INSIDE the chicken.

Leave on the counter for 30 minutes to air dry before putting on the grill.

After the chicken has dried you need to place it on a can of beer. The beer can must be only half full so sip/ chug that first half! Carefully insert the can into the chicken as if it were a tripod. It should not lean or topple over.

Light your grill. You are going to want to light only half of the grill as the chicken needs to cook in INDIRECT heat over the course of an hour and 25 minutes for large chickens and an hour and 10 for smaller chickens. At about 45 minutes in open the grill and cover the exterior of your chicken with melted butter. You can either brush it or use the back of a spoon to rub/ pour it on. Make sure to cover whole chicken evenly.

Once your chicken in a nice golden brown it is ready to come off the grill and be served!
