I wish my Dad was still with us to see this recipe!
He was a huge fan of meatloaf – actually, he was a fan of all kinds of ground beef recipes, but meatloaf was definitely at the top of his list! My Mom used to make her favorite meatloaf recipe at least twice a month, and I remember how funny it was to see my Dad so excited about food. Ok, I’ll admit it – we all loved it, and I didn’t think I would ever be able to find a recipe that tops my Mom’s. But I think I finally have!
Ladies and gents, this loaf is somethin’ else. Unbelievably moist and flavorful, wrapped in savory bacon, and carrying an ooey, gooey surprise inside! I don’t think we’ve ever had such a silent dinner as we did when I was serving this to my family.
It’s not that we didn’t want to talk about anything – we just couldn’t! We were way too busy licking our plates clean!
