Auntie Laura’s Lazy Lasagna Is Here To Stay

My mom used to always make lasagna about once a week.  It was an easy weeknight dinner for any day where she was busy or tired or we all had different schedules and could not necessarily eat together at the table.  What she would do was make a double batch of ground beef in pasta sauce on Sunday and then prepare two lasagna’s in disposable tin pans.  After that, she would freeze them and just thaw and cook whenever she needed it.  It was an easy dish to have put away for a little emergency dinner, so she made sure to always have it on hand.

Nowadays, I make lasagna often as well.  Maybe not as often as her, but still, we love it.  However, as genius as her method of preparing two and freezing them is, I do not do that.  Nope, instead I make this lazy girl’s crock pot lasagna.  No need to go crazy with those long noodles that fall apart when you bake them.  I make this crock pot lasagna with raviolis.  If I want to make it extra fancy, I use spinach or beef filled ravioli.  Both add a nice flavor to it.  This is the simplest dinner, ever.
