There are a lot of traditional dishes that get makeover nowadays and they surprise me all the time. I remember that day that I discovered ice cream could be fried. When you first think about it, you wouldn’t believe it could happen. The scenario in my head all involved wasting a good scoop of ice cream. And then I realized that of course, there would be a shell of some sort because ice cream by itself couldn’t definitely be fried as it was!
When I first tasted Eileen’s chicken enchilada puffs, I was surprised as well. Eileen was one of my boyfriend’s colleagues who served as his assistant. She was the first one I always meet whenever I visit him while he’s working.
She served me one of these puffs while I was waiting in the room for visitors. I thought it was cream puff at first until I took a bite and tasted it. It was so savory!
So flavorful that I didn’t hesitate to ask for another when she came back to bring me my tea. Well, it’s food. No one should hesitate when it comes to good food!
