Last spring, we went to my Uncle Pete’s house to watch the very first NASCAR race of the season. He and my husband are both extremely passionate about the sport. I could live with or without out it. We loved going to Uncle Pete’s though because he had four wheelers and motor bikes and other kinds of fun stuff for the kids to do outside. Okay, I was usually outside with the kids too. The guys would sit inside and watch the race while Aunt Jaime worked in the kitchen trying to feed everyone that my Uncle had invited over.
After a few hours on the toys outdoors, my aunt called us in to eat. There was a huge spread of traditional potluck foods, and these yummy egg roll looking things sitting on the end. When I asked what they were, my Uncle said, “Oh my gosh you have to try them!” I like egg rolls so there was no second guessing it for me. I took a little sour cream dip, unsure of what I was going to find inside.
When I took a bite, it was an explosion of potatoes and cheese that was just so tasty! It was just like this recipe from Spend with Pennies. I had to go back up for seconds and thirds…I couldn’t get enough!
