Appetizer Of the Century: Cheesy chicken Poppers!

Now when I make these for bigger social events, or even for dinner parties at home with a few friends, I always start out with a double batch. They pretty much always get eaten up. If there are any leftovers, I just pop them in the fridge in an air-tight container. They make the perfect little snack when hunger hits during the middle of the day. I have also made these for my little ones for an after school treat. They just love them!

This recipe is insanely easy to make and my husband said he LOVED these yummy little appetizers. That sounds like my music to my busy ears. Easy and tasty….how perfect!

 

Ingredients

1 large chicken breast, cooked in butter, and chopped, about 1.5 cups
1 Tbsp fresh dill, chopped
1/2 tsp onion powder
1 Tbsp Frank’s Red hot sauce
2 oz Sargento colby cheese, freshly shredded
3 oz Hellmann’s mayonnaise, plain variety
salt, kosher variety, to taste
black pepper, freshly ground, to taste
1recipe for pizza crust, your favorite, rolled out and cut into 2-inch rounds
4 oz mozzarella, freshly shredded

Instructions

Gather your ingredients.

Place a rack in the middle position, and preheat the oven to 375f (190c).

Mix the chicken, onion powder, hot sauce, colby cheese, and mayonnaise in a small bowl.

Season with a bit of salt and pepper, to taste.

Cut the pizza dough into rounds, about 2-inches in diameter.

Add the pastry rounds to a mini cupcake pan.

Add to the oven and precook for 5 minutes.

Remove from oven, allow to slightly cool, and then fill with a heaping teaspoon of the chicken.

Top with some mozzarella.

Return to the oven, increase the temperature to 400f (205c), and bake until the cheese is melted and bubbly, about 6 – 8 minutes.

Serve on a platter while still warm, and watch them disappear. Enjoy.
