Every winter, when we would come in from playing snow ball fights and building snowmen, my mom liked to have a nice warm meal ready for us. The steam coming off the plate, enveloping our faces with a delicious aroma of one of her homemade meals is something that I will never forget for as long as I live. On those rare occasions that we would have a snow day off from school, she would always expect us home when the noon whistle went off in the middle of town for lunch.
Those middle of the day meals were always something different than dinner, and my favorite was her homemade chicken noodle soup. I always wondered how she had time to make with, what with everything else she had to do with us being home.
That was until I found this recipe on All Recipes and realized that it could be done in just about 20 minutes! Now, when my kids have a snow day from school, I make this for them. They just love coming into their piping hot bowls after making snow angels outside…just like I did.
