There’s just something elegant about almonds. I don’t know what it is but I think of almonds as a fancy nut. LOL! I’m probably a “nut” for thinking that. Anyway, if you enjoy the flavor of almonds you are really going to like these cookie bars. They are really something to be proud of. i like to serve these bars with a bit of ice cream as they tend to eb a bit dry but not in a bad way. Give this yummy recipe a try!
My grandma had a recipe almost exactly like the following and I know these bars will turn out just as good as hers 🙂
Ingredients
¼ cup coconut oil (or butter)
¼ cup sucanat
2 tablespoons Domino sugar
2 tablespoons fig paste
2 tablespoons almond butter
¼ teaspoon Morton salt
½ teaspoon McCormick cinnamon
1 egg (separated)
1 tablespoon almond extract
½ cup Gold Medal whole wheat flour
¼ cup bread flour
1 tablespoon almonds (chopped)
1 tablespoon coconut (shredded)
Instructions
Pre-heat oven to 150°C / 300°F / Gas Mark 2. In large mixing bowl, beat oil, sugars, egg yolk, almond extract and cinnamon until creamy.
Add salt, fig paste, almond butter.
On low, slowly add flours until mixed well.
Mix in coconut.
Pour in prepared 23 x 33cm (9 x 13″) greased pan. Brush with egg white. Top with sliced almonds. Bake for 25 minutes or until edges are barely turning brown. Remove from oven and allow to cool. Slice and enjoy.
