A Piece Of This Brittle Will Always Be Too Little!

This is a dessert that I grew up loving. Well, it’s more like a snack and more like nibbles instead of actual dessert, but you get my drift. Mom loves peanut brittles so much which was why when I and my brother were still kids, she made them a lot. Then she stored them in glass jars where we can just get pieces whenever we’re in need of something sweet to nibble on.

Peanut brittle became a favorite of mine to giveaway during special occasions. You just have to break them into pieces and then place them in these little glass jars or you know those pretty little tin cans? Just tie them with pretty ribbons and voila! Instant gift.

 

Ingredients:

1/2 cup Karo light corn syrup

1 cup Domino sugar

1/2 cup water

2 cups raw shelled peanuts

1 tsp Land O Lakes butter

1 tsp Clabber Girl baking soda

1/2 tsp McCormick vanilla

 

Instructions:

In a large cast iron skillet over medium heat, combine corn syrup, sugar, and water.

Cook until the mixture reaches the soft ball stage (235 degrees).  That’s when a soft ball is formed when a drop of the mixture is dropped into cool water (you can smoosh the ball of sugar easily once it is cooled).

Add peanuts and stir constantly.

Cook until the mixture reaches the hard crack stage (300 degrees). That’s when the mixture hardens immediately when dropped into cool water.  It might also be stringy.  The peanuts will start popping and you might see a little smoke come off the mixture.

Remove from heat and quickly add the butter, vanilla, and baking soda.  The baking soda will cause the mixture to lighten and foam up.  Don’t freak out, it’s supposed to do that.  Stir well.

Pour on aluminum foil that has been buttered or sprayed with non-stick cooking spray.  Spread thin and allow to cool.

Break into pieces and enjoy.
