There is something to be said about beautiful, fresh bell peppers harvested from your home garden. I had some plants in my backyard that were very good to me this summer. I enjoyed most of my red bell peppers raw with some spicy dip, stir fried, in soups, and even in some salads. I was trying to find out new ways to enjoy this wonderful vegetable and then it dawned on me: roasted! Have you ever roasted bell peppers? It’s not difficult at all, and you get restaurant quality results!

These will go perfect with your entree, no matter what it is! Or spread some of these over a slice of toast, for a wonderful appetizer. I love how colorful these are – they take any meal to the next level. I love mixing yellow and green bell peppers with these, for even more color!
