A few weeks ago, my parents called and said that they were coming for a visit.
No big deal, right? They come all the time and stay in the guest room, play with the kids, and even let us go out for the night sometimes. It’s a real treat to have them around. I usually have plenty of time to prepare for their arrival, including making up a few casseroles or entrees, doing the cleaning, and taking care of the grocery list.
This time they forgot to tell me until they were walking out their door! They only live about three hours away so that didn’t give me a whole lot of time. My son had a basketball game that night so I knew we weren’t going to have time to go out to eat.
Thank the Lord I remembered this recipe for cheesy chicken roll-ups that I had seen. They were super simple to make, I already had all the ingredients, and perhaps most importantly, I could make them ahead of time and stick them in the fridge.
That’s exactly what I did. Then, I had time to get the house picked up and make everything presentable for their arrival. Dinner was delicious that night and I was stress-free for the rest of the weekend!
