Every year, when Christmas time rolls around, we begin to do our yearly traditions.
Some nights, that is prepareto hot chocolate and head out to see the lights around the neighborhood. Other nights, that means ordering pizza and watching a Christmas movie on the couch. And yet, other nights, it’s all about popcorn and making gingerbread houses. We always buy those premade gingerbread houses that you just have to stick the walls together and glue. I was never interested in baking the actual walls because they would take too much work in my opinion.
But, I realized as we were decorating this year, that I never even try the gingerbread. After it is baked, we spend the next few days picking at the candy and enjoying the chocolate and marshmallows on it. Yet, by the time we strip it of the candy, we have given up and decide that it is time to just throw away the whole house.
That is when I got the idea to make gingerbread cookies. I had never tried them (especially a fresh batch) and knew how much I love cookies, they would be a hit. And guess what? I was right. The cookies were nothing like the hard stuff that comes in the house kits!
