Whenever I know that my husband is going to come home from a long, hard day at work, I want to be sure to really fill him up with a good meal. Because you know the way to a man’s heart right? I never seem to get any complaints when I do a nice pot roast. The same seasonings tend to get old, at least for me. When I’m in the kitchen I like to mix things up a bit. Then I saw this recipe for a roast with Pepsi in it and I’ll have to admit, I was intrigued.
The fact that the ingredients list was short was another initiative to get me to try this. Now, when I know it’s going to be a long day without a lot of time for food prep, this is my go-to meal. Of course just meat isn’t enough to feed my hungry family.
I usually will throw in some potatoes and carrots about halfway through the cook time if I’m home. On those days that I can’t be around to do that I will pair it up with some other complementary side dishes like homemade macaroni and cheese and fresh green beans. My loved ones go to bed full and I go to sleep satisfied.
