Who Else Wants To Sleep For A Little While Longer Tomorrow Morning?
My husband works both morning and night shifts, which means he often has to wake up at 4:20am to get to work on time. I feel sorry for him – I work from home so I don’t have to worry about a long commute. Even though I get up at the same time, my mornings are a lot more peaceful than his. So I always get up, make him coffee and breakfast and pack some lunch so that his day would start in the best way possible.
The only problem is that even though I’m up, I’m basically just sleepwalking when it’s so early! It takes a couple of hours for my brain to wake up and before that, I can hardly function. So I had to figure out a way to make a tasty breakfast without too much of an effort.
This breakfast casserole is absolutely awesome. I do all the prep work right before I go to bed, and then I just leave it in the refrigerator overnight.
In the morning, I get up about 30 minutes before my husband wakes up, I set the coffee maker and throw this tasty meal in the oven (and go back to bed!) We both get a delicious breakfast and the leftovers make a great lunch for him!
