Healthy, Lean And So Delicious You Won’t Even Believe It!
I have died and gone to heaven. That’s exactly how I felt when I had my first taste of these incredible stuffed zucchinis. I had had my doubts about the recipe – well, mostly about whether my husband would like these or not. You know, because these are vegetarian. You heard me – they’re all veggies and no meat, and hubby dear is a meat-loving kinda guy.
I decided not to mention the lack of meat until he had actually tasted the dish. I have made stuffed zucchini before, with ground beef and he liked it. But I wasn’t sure if he would immediately notice what was going on. He absolutely loved these!
Maybe it’s because he’s a big fan of pesto – or maybe it’s just because these were so freaking awesome, but he liked them so much that he actually suggested we would serve this at our first BBQ this spring. I think it’s a great idea!

Quick Tip: Even though this recipe is vegetarian, you can definitely add ground beef, leftover chicken or crumbled bacon.
