Here’s a weeknight meal you’ll whip up in no time!
The other day I had made a simple spaghetti for lunch for my kiddos. I am the queen of simple lunches as we are a homeschooling family so whatever I make needs to be quick and simple so we can get back to work. You really can’t get more simple than spaghetti when it comes to hot lunches. One of the biggest mistakes that I make when making spaghetti is that I ALWAYS make a massive amount. When will I learn to stop using an entire box of spaghetti?
Now, I do not believe in being wasteful so I decided I was going to use all of that leftover spaghetti in another meal. That’s when I came across this amazing recipe for spaghetti pie! Don’t confuse this “pie” with a dessert pie because it is anything but.
However, this dinner pie tastes just as good as any cream or fruit concoction that your grandmother would have made on a Sunday afternoon for supper. You won’t believe how easy this pie is to make using your leftover lunch or dinner food!

Quick Tip: If using cold spaghetti, you may need to cook this for an additional 15 minutes (I did). Use a pie crust shield (or aluminum foil) around the crust if you see the crust is done before the biscuits inside the pan are golden brown.
