My son came up to me after school a few weeks back with two of his buddies in tow…”Can they come and spend the night?” How was I supposed to say no to those three hopeful faces…I couldn’t do it. “Sure, get in guys.” Away I drove with three very hungry elementary school students. Now, what the heck was I going to do with them? When they first got to the house, they quickly devoured just about every snack that was in sight.
I told them to take a break and go out and play while I came up with something for dinner. That’s when I started scrounging around in the kitchen and remembered this recipe for a burrito pie that I saw on All Recipes.
I had everything that I needed to make it, so I go to work right away. It made a nice big pie that fed those hungry kids along with me and my husband. It was really good too.
Thankfully, the rest of my kitchen stayed in one piece the rest of the night. I think I finally had them filled up!
