20-Minute Tuna Casserole

As a broke college student living in an apartment with four other broke college students, we spent a lot of nights scraping together what little money we did have to try and get something to eat. Usually, we would come up with just enough to get a pizza, as long as it was one of their weekday specials. If it was a weekend though, forget it, we could’t afford that delicacy.

When I called my parents and told them about our suffering, after they stopped laughing, they suggested we try tuna noodle casserole. Say what?! I had never heard of the stuff. They said that’s what they lived on in college, and it was worth a shot.

They pointed me to the Group Recipes site and this recipe for a quick 20-minute version of the dish. We pooled all of our money together and picked up the ingredients. Some of which we already had so that that was a nice bonus. We made this that first time and it was like an answer to our prayers.

We all got nice and full, and with that double batch we made, there were even leftovers the following day. This was one of our weekly meals up to graduation!
