The Spring season means one thing at our house, pure chaos. Everyone gets so busy, we are all running in different directions. My kids all play sports, my husband and I are on a golf league, and then there are all of our regular activities like work and school as well. So, to sit down to the table for a home cooked meal… not likely.
I very rarely have time to even make a grilled cheese sandwich, so a casserole was out of the question, except for when I found this recipe on Group Recipes for cheesy broccoli and rice casserole.
It looked super simple to put together and I already had all the ingredients so I squeezed it in on one of the not super busy afternoons. It was done in just about thirty minutes or so and out to the table while everyone was actually sitting there.
The whole family really enjoyed this, and I enjoyed the few minutes I had with my whole family.
