OMG – This Is Better Than Grandma’s!
Over the years I have tried a gazillion carrot cake recipes. They’ve all had one thing in common; they were delicious. What can I say? I’m a big fan of carrot cake and I don’t think it’s possible to find a carrot cake I didn’t like. However, there are a couple of carrot cakes that have been so heavenly, that I’ve been willing to ditch all the other recipes.
This carrot cake recipe might be the only one I’ll ever use from now on. It is absolutely mind-blowing! It says a lot about this cake that one of the readers was going to make this as a wedding cake!
Another awesome thing about this recipe is that it belonged to my husband’s grandfather. How often do you run into cake recipes that have been made by a grandpa, huh? I think this was the first one for me! Let’s take a look at what it’s all about.

Quick tip: The plain cake is outstanding but you can use your favorite frosting recipe if you’d like to frost it.
The picture shows 3 layers, but the recipe calls for using an 8″x12″ pan. Would this amount of batter fill 3 regular cake pans?
