My son was playing in the regional finals for wrestling not too long ago. It was a big deal. Him along with a few of his teammates did extremely well this year, and we were all so very proud. The tournaments were on a Saturday, and they were at our school. I don’t know how I got so lucky! The school is just about two miles down the road from our house too, so it worked out perfectly when he had a break between matches. I could go home, let the dog out, change laundry over, things like that.
It was a pretty productive day. As the night was getting closer, I thought, “Those boys are going to be starving when they get done.” I remembered that I had seen this recipe for Cheesy Chicken Pot Pie Puffs on Julie’s Eats & Treats and had planned on making them later in the week.
Instead, I quickly tossed them together before their last matches and took them down in my insulated pan to the school. After they were done, everyone gobbled these right up! I don’t think there was a crumb left in the pan.
