Unlike most every other kid that I have ever met in my entire life, my daughter is the strange one. She loves chocolate, frosting, and all things dessert, but she doesn’t like cake. Not even a little bit. Not even cupcakes. No matter how many birthday cakes we have gotten her, she will never eat them. She makes a wish, blows out the candles, and then goes and gets a cookie from the cupboard. I was getting sad watching her not being able to enjoy her own birthday treat.
I was searching around on the internet for who knows what, and I came upon this recipe for funfetti stuffed cookies on Sugar Spun Run. Holy smokes! These were perfect! And it just so happened my girl’s birthday was right around the corner.
I made these up for her instead of wasting our money on cake…again. When I stuck a candle in this and presented it to her, her eyes got as big as half dollars. She made her wish and devoured her cookie. When she asked for more what’s a mom to say on a kid’s birthday? Of course you can have more! It’s your day!
