Every Thursday night when I was in grad school, me and my best friends would all meet at the Irish pub located near our campus. For the most part we studied hard, and worked towards reaching our goals on a daily basis. This was the one day that we took for ourselves. No matter what was going in our lives, we would hang out for at least an hour. Everyone would just show up at the same time, and hang around for a meal and conversation as long as they could.
Whenever I went, I tried something new. That was, until I came across their potato nachos. Potatoes and nachos? Together? It was like a dream come true. I had to rub my eyes a few times to make sure that I was seeing it properly. When the waitress brought them out I was in love instantly.
I didn’t even have to try them. After that night, I never ordered anything else off the menu again. I still remember slapping wandering hands away from plate. They were mine…all mine! Now I have a recipe that I found on Spend with Pennies so that I can make them at home whenever I want. I don’t mind sharing so much now.
