Summer barbecues and picnics are probably my most loved events of all time. After being cooped up indoors all winter long, I can’t wait to get my invitation to the first one. Most of the time, I can’t wait for someone to plan something, so I always invite everyone over to our house for a nice kick off the summer party. I get so excited taking all the lawn furniture and games out of storage, preparing the food, and just getting ready for our guests.
I usually will make a nice meat entree on the grill and a side dish, and then I request everyone else bring a dish to pass. This year, I told everyone to stay away from potato salad, because I had a new recipe from Group Recipes that I wanted to try.
There were no arguments. I made this smokey paprika potato salad, and it was just as tasty as what it looked. Everyone that showed up that day really enjoyed it too.
A few asked me for the recipe, and the ones that were having summer parties later on in the year asked that I make this again and bring it with me. Not a problem!
