Church is one of the places where I spend most of my free time. There is a great group of gals that hang out there and I love working with them organizing different projects, fundraisers, and other activities for the rest of the parish. Once in a while, we will do a soup exchange as a potluck lunch. I would be lying if I told you it wasn’t my favorite event. It’s always so fun to go around and taste everyone’s most famous soups and stews. Then, at the end, we all take our containers that we brought in around and snag a few spoonfuls of our favorites.
This year, I made this cabbage rolls soup from Spend with Pennies. It was a huge hit! In fact, it was so big, there weren’t any leftovers for anyone to take home with them. Some of the ladies were pretty disappointed, but next year I promised to make a double batch at least.
I like to make this recipe at home too. My husband just loves it. I usually serve it with a nice dinner roll or crusty bread to soak up all the yummy juices. Delish!

Quick Tip: Add more beef broth for a thinner soup.
