My brother had been gone for an extended work trip for nearly three months. The date he expected to arrive back home, just happened to be right around his birthday. I knew we would all be getting together to enjoy the fact that he had returned, and to celebrate his special day. I decided that I was going to make a yummy dessert for him and the rest of the family. There is just one little tid-bit of information about my beloved brother though, he doesn’t like chocolate! I know, super strange, but very true.
He likes fruit though, so when I found this recipe for a pineapple dessert on Recipe Lion, I knew it was what I was looking for. It went together super easy, and it looked amazing. When I showed up to my brother’s house with the pan, he couldn’t wait to try it.
He doesn’t get to eat many desserts like this, because most of them have chocolate in them. He loved this, and asked me to make it again with cherries…his favorite fruit.
Of course I did and he said that was amazing too. I think we found his new birthday cake!
