I remember the first time I went to Applebee’s. It was years and years ago after church and I was tired and did not want to be there. I wished my dad had said we would have lunch at home so I could just munch on some chips and chow down a sandwich right before going to my bed for a long afternoon nap. Unfortunately, my dad said we were going out to lunch, so here I was, sleepy after staying awake late the night before catching up on some reading, waiting for lunch to arrive.
My dad ordered appetizers which I was upset about because that meant we would stay out later. Appetizers just slowed everything down. But, when they arrived at the table, I realized my dad had made the right choice. What they brought was a platter full of potato skins that were loaded with all the fixings: cheese, chives, sour cream and bacon.
Oh goodness, they were absolutely delicious! A few weeks ago I went back to Applebee’s again after a very long time and I told my husband we had to have them. When they arrived at the table and I took a bite, they were everything I remembered them to be.
