I will be the first one to admit, now that I am grown and have a family of my own, I don’t go and visit my parents as much as I should. Life gets busy, and time gets away from you. Practice this night, dance recital this day, hockey game the next day…there just doesn’t seem to be enough time in the week to get anything done. However, my mom knows how to lure me in…pot roast!
This has always been my favorite meal, ever since I was a little girl. She is well aware of my weakness and once in a great while, when she’s really missing me, she will call and tell me that they have made a pot roast and there simply isn’t any way that they will be able to eat it all.
That’s when I will load up the family and head to Grandma and Grandpa’s for dinner. The recipe that they use is just like this one I found on Group Recipes. It’s always so tender and paired perfectly with potatoes and other vegetables.
I know I should go see my parents more often…but at least they know how to get me over!
